Ruby Port Cask Finish
After maturation, our whiskey undergoes a finishing process in hand-selected Ruby Port wine casks, imparting a rich hue and layers of red berry fruit notes complemented by subtle wine sweetness. This specialty finish adds a Sligo twist—port was a cherished import during Ireland’s literary era—enhancing both flavor and narrative.
Tasting Profile
– Nose: Inviting aromas of vanilla, honey, and toasted oak from ex-bourbon casks, heightened by hints of red berries from the port finish.
– Palate: Exceptionally smooth with notes of dark fruits, a touch of spice, and a gentle peaty smokiness from a portion of peated malt, providing depth and balance.
